Safety assessment of food microbes

The safety of novel foods must be assessed before they are placed on the market within the European Union or USA. The application submitted to the regulatory agencies must include description and detailed composition of the novel food, the production process, and scientific evidence demonstrating that the novel food does not pose safety risk to human health. Microorganisms can only be applied as a food ingredient or production strain if they are sufficiently stable and able to function optimally under the desired conditions. Probiotic bacteria, for example, often need to be able to withstand the gastric acid and bile salts that are present in the stomach and intestines. To investigate and optimize these characteristics, it is necessary to find out which genes are expressed in a given physiological background.
